This spinach salad is SUPER easy to make, especially once you have the chicken and chickpeas prepped. You can heat it up throughout the week, or eat it cold, and regardless, it tastes amazing with the dressing. I like to add in some couscous to add in some healthy and filling carbs. This salad would also be amazing with tomatoes, but sadly I was out.
Roasted Chickpeas
1 small can | Chickpeas, drained and rinsed |
1 tsp | Paprika |
1 tsp | Garlic powder |
1 tsp | Onion powder |
2 tsp | Sea salt |
1 tbsp | Olive Oil |
Crispy Panko-Crusted Chicken
2 | Chicken breasts |
1/2 cup | Panko breadcrumbs |
1 | Egg, whisked |
1 tsp | Parsley |
1 tsp | Garlic powder |
1 tsp | Sea salt |
1/4 cup | Avocado oil |
Salad
Baby Spinach | |
Couscous (cook by directions on box) | |
(Optional) | Cherry Tomatoes |

Coming at ya with a super quick and easy lunch or dinner recipe. This came about one day when I decided to whip up a super simple salad for lunch and top it with one of my chicken cutlets that I have been making for years! When I create a meal, I try my best to make sure that it has a healthy balance of fats, carbs, proteins, AND veggies. I find that this winning combo keeps me full and away from mindless snacking.
Roasted Chickpeas Directions:
-Preheat oven to 375
-Drain and rinse chickpeas, pat dry
-Drizzle oil on chickpeas and toss in seasonings
-Bake for 20-25 minutes, tossing occasionally
-Let cool
Crispy Panko-Crusted Chicken Directions:
-In a medium skillet, heat oil on medium heat
-In a bowl, combine spices and panko breadcrumbs
-In a another small bowl, whisk one egg
-Dip chicken breasts in egg and directly coat in panko mixture
-Cook chicken in heated skillet until golden brown on each side
-Finish in the oven @ 375 degrees for about 9 minutes (could be more or less depending on the size of your chicken breasts)
Salad Directions:
-Assemble salad as desired
