This is a perfect and simple and perfectly simple salad.
If you’ve ever been to the Central Farm Market in Bethesda, you have probably either seen or stood in the line at Young’s Harvest where Rob (pictured above) sells his incredible greens: spinach, arugula, salad mix, sprouts…. If you haven’t been, they’re worth the trip. (And you’ll find our stand right next to Rob’s).
This is what we whipped up using his greens:
2 cups arugula
1 cup sprouts or microgreens
1 cup pea shoots
1 avocado – cubed
4 stalks of heart of palm – sliced
¼ cup hemp hearts
Dress It Up Dressing Red Wine Vinaigrette
Combine all of the ingredients in a large bowl and toss!
The first time we made this we served it for lunch with smoked salmon and fresh dill. The combo was divine: light but full of flavor.
