I was hooked the first time I tried Microgreens. That they’re loaded with more nutrients than mature vegetables is almost irrelevant given how good they taste!
Fresh English Peas – hulled, raw
Red Boston Lettuce – 1 head
Avocado – 1 cubed
Flax Seed – 2 tablespoons
Superfood by New Day Farms – 1 tub
Dress It Up Dressing Champagne Vinaigrette
Put in a bowl and mix.
For this salad, the soft boston lettuce and the crunchy fresh peas get wrapped up in micro greens for a textured concoction that tastes fresh and delicious.
For variation, I’ve used fresh Garbanzo Beans instead of the English Peas. You could also try hemp or sunflower instead of flax seeds, but it’s pretty delicious just as it is.
