Move over Chicken Caesar Wraps — there’s a new wrap in town! Filled with nutritious chickpeas, fresh herbs, and luscious vegetarian Caesar Dressing.
Spinach wraps – 2
Chickpeas – 1 (15 oz) can
Red Onion – 1/4 cup, diced
Parsley – 1/2 bunch
Avocado – 1
Potomac Sprout Company Alfalfa Sprouts – 2 generous handfuls
Dress It Up Caesar Dressing – 5 tablespoons
Rinse and drain the can of chickpeas. Gently rinse the parsley and then chop finely. Dice the red onion.
Transfer chickpeas to a mixing bowl and mash. Don’t worry about mashing until completely smooth — it’s perfectly fine to leave some chickpeas whole! Add red onion, parsley, and Caesar dressing to the mixture, and mix with a spoon until combined.
Place wraps on a plate and mash half of the avocado onto each. Then, divide the chickpea mixture between them. Top with a handful of Potomac Sprout Company‘s sprouts. We used their alfalfa sprouts, but they’re all delicious!
Tuck in the ends of the wrap (this will keep all of the delicious filling from falling out) and then, one at a time, bring the sides of the wrap towards the middle. Simply slice in half and enjoy! Feel free to serve with a little Caesar Dressing on the side for dipping!
