This raw crudité salad is perfect for a warm Spring day. The fresh, uncooked vegetables leave you feeling light and refreshed, while the combination of creamy Caesar and avocado chunks satisfy your craving for a little indulgence.
Carrots – peeled and cut into chunks
Cucumber – peeled, thickly sliced, and quartered
Bell pepper – we used 1 Striped Holland pepper
Radishes (of your choice) – cut into quarters
Edamame – 1/3 cup
Avocado – peeled and cut into chunks
Dress It Up Caesar Dressing
Prepare your vegetables by washing and cutting into thick pieces. Our recommendation is to do equal parts of each vegetable (roughly 1/3 cup). Toss the vegetables together with avocado chunks and 2 spoonfuls of our Caesar dressing. Best served chilled.
