Doing a demo at Whole Foods is often food for thought. In this case, they were having a mega-sale on mandarin oranges. I paired it with Apple Cider vinaigrette one day and Chocolate vinaigrette the next.
Kale – one bunch, finely chopped
Ripe Mandarin Oranges– about 4 peeled and cubed
Avocado – one cubed
Dress It Up Dressing Apple Cider Vinaigrette
Put in a bowl and mix
I like to let this sit in the fridge, or on the counter and “marinate” for a little while before serving. It gives the flavors a chance to permeate and softens the kale.
The sweetness of the oranges cuts any potential bitterness in the kale.
Adding a ripe avocado adds just the right amount of gooeyness (although sometimes a bit too much, so don’t use the ripest of the ripe).
