Heart of Palm and Hemp Hearts – do you love it already?
Arugula – 4 cups
Endive – 1 head
Sunflower Microgreens – 1 cup
Avocado – 1 whole, cubed
Heart of Palm – 4 stems, sliced
Hemp Hearts – 1/4 cup
Dress It Up Dressing Blackberry Vinaigrette
Combine all the ingredients in a large bowl and toss.
If you are using baby Arugula, add it after you have tossed the other ingredients as it is tender and can bruise.
This is a great starting point for a salad from which you could either add or subtract with limitless possibilities. The Endive and Arugula together offer an aromatic base. Slicing the Endive and the Heart of Palm the same width gives you similar shapes with different textures. You could add some baby Kale and pump up the nutrient value, or add some steamed or grilled shrimp for a bit of protein and to make a meal out of it.
