Let the sweetness of Mango change your opinion about Kale!
Kale – one bunch curly green kale, massaged and finely chopped
Ripe Mango – 1 juicy one peeled and cubed
Dress It Up Dressing Chocolate Vinaigrette
Put in a bowl and toss.
Some days I enjoy scrunching up the kale and chop chop chopping it. On days I’m feeling less violent, I will feed it through the tube on the food processor with the cheese grater attachment and the kale will be ready in seconds flat. You have to make sure it’s very dry, though, otherwise you may accidently make soup.
I like to let this sit on the counter and “marinate” for a little while to give the vinaigrette a chance to “tenderize” the kale.
