I was thumbing through Michelle Obama’s American Grown prior to a demo at Whole Foods one day and found this recipe. I quickly gathered all the ingredients and substituted my Apple Cider vinaigrette for hers. I couldn’t have been more pleased with the results!
Fennel – one bulb
Asian pear – one crisp one
Lemon Juice – 1 tablespoon
Shallot – half of one finely chopped
Parsley – a big handful of leaves chopped
Parmesan cheese – ¼ cup grated
Walnuts – ½ cup roasted
Dress It Up Dressing Apple Cider Vinaigrette
Feed the Fennel through a food processor “slicer” on the thinnest possible setting. Halve and stem the pear and put it through the food processor on the same setting. Sprinkle with lemon juice and add to the fennel.
Add shallots, parsley, cheese and walnuts.
Stir in the Apple Cider Vinaigrette and serve.
