I’m new to eating corn raw, but if it is fresh, there is nothing like it!
Kale – one bunch, finely chopped
Corn – 2 ears fresh and raw
Red Pepper – one cored and finely chopped
Dress It Up Dressing Apple Cider Vinaigrette
Massage the kale prior to chopping. I give it a good squeeze
like I’m washing a sweater, then chop it fine.
I find the raw corn so delicious only about 50% of it makes it to the bowl without being “sampled”. If you don’t have fresh corn, then cooked will do. (My preferred way of cooking corn is to put it in the microwave in the husk for 3 minutes and 33 seconds). Dollop on the dressing and serve.
Like many kale salads, this will only get better if allowed to marinate for a little while.
