Prepare to fall in love! This raw corn salad is so easy to throw together and can be totally customized to your liking. This salad can be made in advance and stored in the fridge, making it the perfect dish for when you’re hosting. A delicious drizzle of our Champagne Vinaigrette is all you need for the finishing touch.
Raw Corn – 4 ears
Cherry Tomatoes – 1 pint
Avocado – 1
Basil – ½ bunch
Dress It Up Dressing Champagne Vinaigrette
Slice kernels off the ears of corn, dice the avocado into chunks, halve the tomatoes, and roughly chop the basil. Mix together in a large bowl with at least 3 tablespoons of Dress It Up Dressing Champagne Vinaigrette.
Continue adding dressing until salad looks evenly coated, but do not overdress–a little goes a long way!
Optional: Try making it with fresh mint, mozzarella cheese, or your favorite summer vegetables!
