This Italian Pasta Salad is packed with bold flavors and vibrant veggies! Our Red Wine Vinaigrette is strong enough stand up to the strong flavors without overpowering them, and the vinaigrette’s unique creaminess gives the salad a delicious, velvety coating.
1 package Rotini (16 oz)- cooked to package directions (I like al dente), cooled
2 c. spicy salami, chopped into small cubes
2 c. mozzarella cheese or baby swiss, chopped into small cubes
1-2 c. cherry tomatoes
¼ c. parsley, chopped
¼ c. pepperoncini, roughly chopped
Fresh basil, chopped
Roasted artichokes, chopped (optional)
Salt & pepper, to taste
Dress It Up Dressing’s Red Wine Vinaigrette- to taste
Assemble your salad by adding all ingredients to a large bowl, combine. Season to taste.
*This salad lasts in the fridge for up to 5 days, undressed. Add dressing once ready to eat! Enjoy!
