Air Fryer Salmon

There’s a recipe I’ve been relying upon ever since I bought an Air Fryer a few months ago at my sister for the suggestion (thanks, Beu!).
This is so #NoFail that all three children love it and you know what a miracle that is!
Using a salmon filet that’s between a pound and a pound and a half (or whatever amount you need for the number of mouths you’re feeding), I cut it into generous chunks, at least 1” x 2”. Then arrange them on the airfryer basket with some space in between and give them a light brushing of Champagne Vinaigrette and a good cracking of sea salt.
Then pop it in the oven and let it work its magic. We like ours crispy on the outside and juicy within, and 9 minutes at 440 degrees in my oven is just perfect for this. I’ve played around with a couple different times and temps and this is where we landed. The variations are either less time and then it’s still delicious, but lacks the crispy outside, or more time with the risk of having them dry out completely. If you like salmon skin, this recipe yields a skin so dry and crispy it’s like candy.
Serve it up on a bed of lettuce, like this beautiful nutty mâche with some pesto or herbed mayo as an added accent and hold for applause.

Champagne Vinaigrette
Directions
Preheat your air fryer to 440 degrees F.
Cut the salmon fillet into generous chunks.
Brush the salmon chunks with Champagne Vinaigrette and sprinkle with sea salt.
Arrange the salmon chunks in the air fryer basket with some space in between.
Cook for 9 minutes, or until crispy on the outside and juicy within. Adjust cooking time to your preference.
Serve on a bed of lettuce with pesto or herbed mayo as an accent. Enjoy!
