Fennel Quinoa Salad

Salads can be a yearlong dish! In fact, nothing is cozier than a warm winter salad/grain bowl. This warm fennel quinoa salad is a true showcase of healthy ingredients and one of our current favs.
The seasonal produce lends itself to being roasted, adding vibrancy to the dish. Soft, caramelized fennel slices are paired with sweet and crunchy apples to create a textural delight.
With only 8 ingredients, this salad packs a tremendous amount of flavor, making it a versatile dish for any occasion.
Ingredients

1 cup Simpli quinoa
- 2 large bulbs fennel

2 medium apples

1/2 cup shaved parmesan
- 4 cups baby arugula

A couple of scallions
-
½ lemon
-
2 tbsp Champagne Vinaigrette
Directions
Cut off the stalks of your fennel and fronds and remove any damaged or browned outer pieces of the bulb. Cut each bulb in half lengthwiseThen, cut each half into 6 even wedges resulting in 12 total wedges from one bulb of fennel.
Place cut fennel pieces onto a large bowl and toss in our champagne vinaigrette.
Spread in an evenly spaced, single layer and roast for 25 minutes, or until tender and lightly browned.
Follow stovetop cooking instructions for 1 cup of Simpli tri-color quinoa.
Slice your apples and scallions.
Combine all of your ingredients into a large mixing bowl and top with our Champagne Vinaigrette.
