So much time and attention is given to Spring Rolls, but let’s take a moment to honor the Summer Roll!
Of course, we featured peaches for this roll, because what screams summer better than a fresh, stone fruit? The sweetness of the peach, plus creamy avocado slices, and crunchy cucumber and kohlrabi provide a light and delightful filling that’s perfect on a hot day.
Coated in Champagne dressing and topped with hemp hearts, you can taste the best flavors of summer in every bite.

Hemp hearts

Champagne Vinaigrette
Directions
Prep
Slice peach and avocado; chop cucumber and kohlrabi into matchsticks
Before assembling roll, submerge rice paper in warm water (use dish or container) for 15 seconds
Assemble
Once rice paper is softened and ready to roll, first add hemp hearts and Champagne Vinaigrette
Add kohlrabi and cucumber matchsticks
Layer peach and avocado slices
Top with parsley and roll!
