Greek Yogurt plus Apple Cider vinaigrette is my sneaky substitute for mayonnaise! It’s just as creamy, with all the right flavors, and all the right kinds of fats as well. I’ll use it for all the summer salad recipes – tuna salad, chicken salad, and especially on a simple potato salad.

The ingredients incorporated in this dish are a fun fresh take on your grandma’s classic potato salad recipe. Ingredients

2 Yukon Potatoes

4 Fingerling Potatoes

1 cup of Greek yogurt

2 tbsp of Apple Cider Vinaigrette

1 apple

1 celery stalk

3 green onions

handful of parsley
Directions
Chop all potatoes into 1-inch chunks
Place all potatoes into large pot and cook until soft
Chop celery, spring onion, and apple in small bits and throw into pot
Chop parsley into small ribbons and add in
Mix greek yogurt and Apple Cider Vinaigrette and add into salad
Mix all ingredients together
