This fresh, delightful, and tasty salad is a real treat for the tastebuds! Tabbouleh is a simple Mediterranean salad of fresh herbs, bulgar, and parsley being the number 1 ingredient. It’s dotted with diced cucumber and tomato, all tossed with lemon juice and the Red Wine Vinaigrette.
We are partial to the salad being all about the parsley, with a hint of bulgur thrown in there. The idea is to have a little bulgur with the salad, not a little salad with your bulgur.
The true star is the very finely chopped parsley--lots of it! Tabbouleh is basically a delicious parsley salad. Parsley holds well against the citrus dressing, so you may find that salad is even better the next day.
Ingredients

¾ cup bulgar

½ cup lemon juice

¾ cup of chopped Persian cucumber

¾ cup of chopped tomato

¾ cup of fresh mint

¾ cup of chopped green onion

3 cups of chopped parsley

¼ cup of Red Wine Vinaigrette
Directions
Finely chop parsley, green onion, tomato, and cucumber
Soak or cook bulgar - follow package instructions for best results
Ribbon the mint leaves - leaving larger pieces
Combine the freshly chopped ingredient and mint leaves with the bulgar and lemon juice
Drizzle of the Red Wine Vinaigrette and toss
Best to let sit and chill for at least an hour before serving
