The vibrant colors of this salad make it a crowd pleaser before they've even had the opportunity to taste the wonderful combination of flavors. The mild peppery radishes when paired with the earthy freshness of the parsley and the creamy richness of our Apple Cider Vinaigrette make this healthy, light salad a fantastic alternative to coleslaw or alongside a green salad.
Ingredients

2 Watermelon radishes

1 handful of Parsley

3 Tablespoons of Apple Cider Vinaigrette
Directions
Pass the radishes through a food processor fitted with the thinnest slicing disc possible. If this isn't possible, use a carrot peeler to make paper-thin slices. It's quick work, and gives the radishes the consistency of lettuce leaves, making them soft and tender.
Finely chop the parsley
Place all ingredients in a bowl, and toss to mix thoroughly. I sometimes leave out a few radishes which I use to decorate the plate.

The longer this can sit, the more the flavors marinate.
