One evening when I was living in NYC, I’d prepared an incredible salad – one of those “everything but the kitchen sink” bonanzas – for some friends who were on their way over. I was about to dress it when I realized, not only was I out of dressing, but also out of Red Wine Vinegar with which to make more. So, for the first time ever, I deviated from my mother's recipe! I swapped ACV for the Red Wine Vinegar, adjusted the ratios of the other ingredients, and voila, the Apple Cider Vinaigrette was born.

This was a no brainer combo because of the numerous health benefits of Apple Cider Vinegar (the list goes on for days), but also, because the flavor gave way to so many new options.

Today, I use the dressing as a complement to any apple dish – pork loin, fall veggies, etc. I also use it as a sneaky substitute for mayonnaise in all the traditional mayo-based salads: chicken salad, potato salad, tuna salad, coleslaw. (Apple Cider Vinaigrette plus plain Greek yogurt = mayo!)
