Chopped Kale and Wheatberry Salad

Depending on the proportions you choose, this can be a salad or a grain dish. The wheat berries are firm and nutty, so they have a nice crunch.

 

1 bunch Kale, finey chopped
1/2 cup Red Spring Wheat Berries, cooked and cooled
2 Spring Onions, finely chopped
Feta Cheese, crumbled
3 tbsp
DRESS IT UP DRESSING Red Wine Vinaigrette

 

Substantial enough to make an ideal holiday side dish, and delicious served warm or cold. I like to let this sit and “marinate” a little while before serving. It gives the flavors a chance to permeate and softens the kale. Since wheat berries take about an hour to cook, another hint is to cook up more than you need that you can then add to salads or stir-frys throughout the week.

 Options:
You can also add some cooked beets, or fresh pomegranate. It’s nice to throw some colors and sweetness in there, or a perfectly ripe avocado.
