Avocado Mint Salad with Toasted Pine Nuts & Blackberry Vinaigrette

1/2 head of Green leaf lettuce, chopped

1 Avocado diced

1/3 cup of Pine nuts

2 T (Packed) finely sliced fresh mint
Directions
Follow these simple steps, and you’ll be in salad bliss in no time! This recipe makes approximately 3 servings, but feel free to adjust the quantities to make it a personal salad, or double them to feed a crowd!
Toast pine nuts over medium heat for about 3 minutes, stirring often, until lightly browned in spots. Watch closely, and be careful not to burn. Transfer to a plate to cool. While the pine nuts cool, arrange your lettuce in a serving bowl. Then, simply top with avocado, mint, and toasted pine nuts. Generously drizzle with Blackberry Vinaigrette, toss, and enjoy!
