Kraut Salad

I put this salad together thinking all the ingredients are so good for you individually, that if you combined them, the result would be GREAT for you.
That was the goal: healthy above all else.
What I didn’t expect was that it would be so delicious that even my 13 year old would be begging for more.
The fermentation process for sauerkraut offers benefits that reach beyond those of fresh cabbage. Probiotics improve digestion and give the gut a helpful boost to absorb other vitamins and minerals. It can even help reduce stress and maintain brain health.Combine that with some Kale and Apple Cider Vinaigrette and you have made a superfood super delicious.
I’ve prepared this a couple different ways, so here are some ideas to get you started on creating your perfect combo:
- Just straight up, as a salad
- Topped with an over easy egg for a protein, anti-oxidant, pro-biotic day starter
- Next to sausages for a barbecue bonanza
A couple things you could add:
- Feta – A sprinkling
- Sesame Seeds or Flax seeds – again, just a sprinkling

Ingredients

4 cups of baby kale

2 persian cucumbers

1/2 cup of Hex Ferments Glow Kraut

1/4 cup of walnuts

4 tbsp of Apple Cider Vinaigrette
Directions
Massage the kale for about a minute then cut fine and add to a medium bowl
Dice cucumber into small bits and mix into the kale
Add the kraut to the salad - I used Hex Ferments Glow Kraut which is a turmeric based mix of cabbage, carrots and black seeds
Chop the walnut and add to the bowl
Drizzle the salad with Apple Cider Vinaigrette and mix
