Begin by cooking RightRice according to package directions. Drain and rinse the can of black beans. Slice corn straight off the cob and dice the bell pepper, jalapeño, and red onion. Roughly chop the cilantro, and add all ingredients to a large bowl. Stir in 3 tablespoons of Dress It Up Dressing Red Wine Vinaigrette, and mix well.
Feel free to customize with tasty add-ins like shredded romaine, guacamole, salsa, sour cream, or cotija cheese. You can also play around with the proportions! Turn it into a grain bowl by doing half the amount of veggies. Turn it into a taco by doing half the amount of grain and adding a protein. This recipe has endless iterations, so have fun!
