This Italian Pasta Salad is packed with bold flavors and vibrant veggies! Our Red Wine Vinaigrette is lively enough stand up to the strong flavors without overpowering them, and the vinaigrette’s unique creaminess gives the salad a delicious, velvety coating.
|1 package (16 oz)||Rotini (cooked to package directions (I like al dente), cooled)|
|2 cups||Spicy salami, chopped into small cubes|
|2 cups||Mozzarella cheese or baby swiss, chopped into small cubes|
|1-2 cups||Cherry tomatoes|
|¼ cup||Parsley, chopped|
|¼ cup||Pepperoncini, roughly chopped|
|1 handful||Fresh basil, chopped|
|(Optional)||Roasted artichokes, chopped|
|To taste||Salt & pepper|
|To taste||DRESS IT UP DRESSING Red Wine Vinaigrette|
Assemble your salad by adding all ingredients to a large bowl, combine. Season to taste.
*This salad lasts in the fridge for up to 5 days, undressed. Add dressing once ready to eat! Enjoy!
