I like to keep things easy. Especially things that need not be overdressed - like perfectly ripe tomatoes. So for this gazpacho, there's no blanching or peeling, deseeding or fussiness. Just perfect, healthy (quick) deliciousness.

You're almost done! It's that easy.
For this you'll need a food processor, a blender, or an immersion blender, but you place all the ingredients within, and WHOOOOSH.
Sometimes I make things more complicated by adding a cucumber, or a little parsley or cilantro, but this recipe, just as it is, is light and refreshing and full of pure goodness.
Serve with some crusty bread and a side salad for a light lunch. Or perhaps our cucumber noodle salad.
Or just keep it simple, yet fancy!
