Pomegranate and Arugula Salad

Pomegranates are a potent antioxidant and an impressive anti-inflammatory which result in a plethora of benefits including improved physical performance and memory, fighting against bacterial infections and joint pain, lowering heart disease risk, and so much more.
If that doesn’t make this detox salad alluring, then know that I brought this salad to every holiday function over the last month and the bowl was cleaned out each and every time. Plus, it’s easy and fun to make (once you get past the pomegranate seeds). It’s heavy on the pomegranate seeds (because look at all those added benefits!), but their tartness combines with the sweetness of the Blackberry dressing and the creaminess of the avocado beautifully. Get ready to up the anti-oxidant quota considerably.

4 cups of arugula

2 tbsp of Blackberry Vinaigrette
Directions
Seed the pomegranate. I watched a couple YouTube videos on this and the whacking with a spoon into a bowl of water just didn’t work for me. What did work was slicing off the top and then cutting along the pithy seems to create segments that you can then just pop out.
For the avocado, I used a ½ teaspoon measuring spoon to create little avocado balls that are absolutely delightful! They are a bite size morsel of creamy consistency and flavor that pairs so perfectly with the tart pomegranate.
Place half the pomegranate and the Blackberry dressing in a small bowl and toss to coat. The pomegranate seeds will be your little dressing delivery system throughout the salad.
Put the Arugula in a serving bowl with the dressed pomegranate and toss to distribute.
Next, you can get as creative as you please, but it’s fun to decorate the avocado on top of the arugula, then scatter the pomegranate on top like a wreath.
Sprinkle goat cheese on top and serve.
