This shredded rainbow salad not only looks and tastes beautiful, it is also packed full of vital nutrients.
Kale is a great place to start when creating a detox salad because it has a powerful concentration of antioxidants and naturally helps remove chemical toxins in the body. Beets are also a mighty food that are both anti-inflammatory and said to aid liver cleansing. Adding cabbage is a no brainer as it’s known for having the highest concentration of the most effective anticancer properties of all vegetables (how's that for some superlatives!). Combine these elements with our Apple Cider Vinaigrette and you have a formidable dish!
We used a mandoline to shred the beets, cabbage, and carrots. To speed up the process, you could use the shredding disk on a food processor. You can also mix the Apple Cider Vinaigrette with greek yogurt for a creamier dressing.

Directions
Shred red beets, yellow beets, cabbage, and carrots.
Cut and ribbon the kale
Line up for a rainbow effect or layer for ease
